Job Summary: 

The Sebastian Vail is seeking a dynamic and experienced Director of Beverage to lead our beverage program and enhance the guest experience through innovative and high-quality beverage offerings. The ideal candidate will possess a deep understanding of beverage trends, exceptional leadership abilities, and a passion for delivering exemplary service. The Director of Beverage will oversee all aspects of our beverage operations, including cocktails, wine selection, and non-alcoholic offerings, while ensuring alignment with the overall vision and values of The Sebastian.

Key Responsibilities:

- Develop and implement a comprehensive beverage program that showcases seasonal selections, craft cocktails, and premium wines, aligning with the overall culinary vision of the hotel.  

- Create and maintain a beverage menu that meets the diverse preferences of our guests and reflects current trends in the beverage industry.  

- Oversee the daily operations of bars, lounges, and dining areas, ensuring consistency in service and quality of beverage offerings.  

- Lead, train, and inspire a team of bartenders and service staff to deliver exceptional beverage service and product knowledge.  

- Manage inventory and procurement of all beverage products while maintaining budgetary goals and maximizing profitability.  

- Collaborate with the culinary team to pair beverages with menu items and create special events or themed promotions.  

- Ensure compliance with health and safety regulations, responsible beverage service, and licensing requirements.  

- Develop and implement strategies to enhance guest engagement and satisfaction through unique and memorable beverage experiences.  

- Analyze beverage sales data and market trends to make informed decisions about menu updates and promotional efforts.  

- Foster relationships with local vendors, breweries, wineries, and distilleries to create unique offerings that highlight the local beverage scene.  

- Participate in marketing initiatives to promote the beverage program through social media and hotel events.  

Qualifications: 

- Bachelor’s degree in hospitality management, business administration, or a related field preferred.  

- Minimum of 5 years of experience in beverage management, preferably in a luxury hotel or high-end restaurant environment.  

- Strong knowledge of wine, spirits, cocktails, and non-alcoholic beverages, including trends and emerging brands.  

- Proven leadership skills with experience managing and developing a diverse team.  

- Excellent communication and interpersonal skills, with a focus on guest experience.  

- Strong organizational and time management skills, with the ability to multitask effectively.  

- Ability to work flexible hours, including evenings, weekends, and holidays as needed.  

- Certification in responsible alcohol service or relevant industry certifications (e.g., WSET, Sommelier Certification) is a plus.
